Dijon Dill Salmon

Salmon is a favorite fish for many of us and here’s a quick recipe that’s one of those dishes that looks and taste like you spent a lot of time in the kitchen. I’ve always used dried dill for this one but if you can source some fresh dill I think this will be extra special. Serve this with a mixed salad and you have supper or even a dinner party.

Here’s what you’ll need…

 4 (4 ounce) fillets salmon

3 tablespoons prepared Dijon-style mustard

I teaspoon of dried dill…more if you love dill

Salt and pepper to taste

1/4 cup bread crumbs

1/4 cup butter, melted

Pre-heat oven to 400 degrees F and line a shallow baking pan with aluminum foil.

Place the salmon skin-side down on the foil.

Spread a thin layer of the mustard on the top of each fillet, and season with salt and pepper. Sprinkle on the bread crumbs, and then drizzle with the melted butter.

Bake for 15 minutes, or until the salmon flakes easily with a fork.
