Spicy Tuna Pockets


6 ounces of tuna in water

2 small apples, peeled, cored and diced

4 Tablespoons of sweet, purple onion, chopped

2 stalks of celery, chopped

2 Tablespoons of curry powder

½ cup of jalapeno jelly

1 teaspoon of ground cumin

4 pita pockets


Drain the tuna well and scrape into a medium sized bowl. Add the onion, celery and apple and stir to blend. Using another bowl, combine the jelly and spices. Stir this into the tuna mixture and blend well. Warm the pita bread in the microwave, cut a pocket in each and fill with the spicy tuna.

Option: Prepare the tuna as instructed but put it into a chilled bowl. Serve with crackers and cheese cubes.
