Taco Pasta Salad

This is another one of those easy to put together suppers. You can also use ground turkey or even beans.

Here’s what you’ll need…

1 lb. ground beef

1 pound box of pasta twists

 2 teaspoons chili powder

 1/4 teaspoon salt

 1 garlic clove, minced

 1/2 teaspoon cumin

 3 tomatoes, chopped

1 medium onion, chopped

1 cup shredded cheese

 1 cup black olives, pitted and sliced

1 1/2 cups taco sauce

 4 cups shredded lettuce

 1 avocado, peeled & cubed

 1 cup of crushed corn chips

 1 cup of sour cream

Cook the pasta according to package directions. Rinse with cold water and drain.

Brown the ground beef in skillet. Drain off the fat.

Add the chili powder, salt cumin and one of the chopped tomatoes.

Simmer for about 10 minutes.

Toss the pasta gently with the beef, tomato, onion, cheese and olives.

Add the taco sauce and mix gently. Serve on a bed of shredded lettuce and sour cream.

Serves 6.
