Easy Weeknight Dinner-Chicken Fried Rice
There’s nothing better than a quick meal that tastes like you spent lots of time preparing it. Chicken Fried Rice cooks up in less than 30 minutes and makes the perfect weeknight dinner.
What you’ll need-
1 tablespoon sesame oil (other oils will work too but sesame oil gives in more depth of flavor)
1/2 cup chopped green onions
1/4 cup diced celery
1/4 cup chopped and seeded red bell pepper
1 clove garlic, crushed
1 teaspoon of grated gingerroot…more if you like more heat
Pinch of crushed red pepper flakes, once again more if you like more heat
1 beaten egg
3 cups cooked long-grain rice
2 cups diced cooked chicken
2 tablespoons soy sauce
1 tablespoon of honey
Over medium high heat, and in a large skillet or wok, heat the oil.
Add the green onions, celery, bell pepper, garlic, ginger and red pepper flakes and saute until they are tender crisp, usually around five minutes.
Pour in the egg and stir and then cook until it’s set.
Next stir in the rice, chicken, soy sauce and honey and cook until heated through.
