Cream Cheese-A Cook’s Best Friend

I love creamy soups and sauces but sometimes I’m not in the mood to make a roux and stand at the stove slowly adding milk to make sure it doesn’t burn.

One item I’ve come to love for a go to shortcut is cream cheese.

It gives soups a great finish with its velvety texture. In fact, it makes a dish seem like you took ages to make it.

I love adding it to cheese and broccoli soup, homemade mac and cheese, cauliflower side dishes and the list goes on.

You can also use it for a quick spread, add some herbs and sun dried tomatoes or olives and spread it on bread and it’s wonderful.

Best thing is it’s not that expensive and you can freeze it too. Yes, it does change its texture somewhat but if you’re adding it to soups and sauces that’s not such a big deal.

The holidays are upon us which means cream cheese is always on sale so it’s a great time to pick up some extra boxes and put them away for future eating.
