Cranberry Sweet Potato Muffins

One thing I do every holiday season is buy extra cranberries to freeze so I can enjoy them throughout the year. I know it’s only February and the holidays are still in our recent memory but last week it was time to pull out one cup of the frozen berries and combine them with sweet potatoes and cinnamon to bring culinary enjoyment to a cold winter’s day…

What you’ll need-

1 1/2 cups flour

 1/2 cup sugar

2 teaspoons baking powder

 3/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1 egg

1/2 cup milk

1/2 cup cooked and mashed sweet potatoes

1/4 cup butter, melted

1 cup fresh or frozen cranberries

cinnamon/sugar

Grease 12 muffin tins and preheat your oven to 375 degrees.

In a mixing bowl, Combine flour, sugar, baking powder, salt cinnamon, and nutmeg.

In another bowl, mix the egg, milk, sweet potatoes and butter.

Stir the egg mixture into the dry ingredients until everything is nicely combined.

Stir in the cranberries.

Fill the muffin tins about half way.

Combine some sugar and cinnamon and sprinkle on each muffin.

Place in oven and bake for about 20 minutes.

Remove from the oven and let them cool in the muffin pan for about ten minutes and then take them out and let them cool on a wire rack.
