A New Take on the Chef Salad
Let’s kick off the new year with a twist on an old favorite, the chef salad. And yes, after all the treats we’ve consumed during holidays, this is a welcome break…
What you’ll need…
½ lb. mixed salad greens
1 cup fresh basil leaves, torn into pieces
¾ lb. cubed turkey breast
1 small jar of prepared roasted peppers
1/3 cup Kalamata olives, pitted and cut in half
1 cup cherry tomatoes, cut in half
1 medium avocado cut into cubes
4 oz Swiss cheese, cut into strips
For the dressing
2 TBS balsamic vinegar
2 TBS extra virgin olive oil
Salt and cracked black pepper to taste
How to put it all together
Rinse and dry salad greens and divide between 4 plates and top with the rest of ingredients.
Whisk together vinegar, oil, salt and pepper and drizzle on top of the salad.
Serves 4
