BREAKFAST FRITTATA
They say breakfast is the most important meal of the day and I think this one will not only become a breakfast staple but maybe a lunch and even a dinner one too…
Here’s what you’ll need-
½ medium onion, minced
4 medium cloves garlic, chopped
¼ lb. ground turkey
2 tablespoons oil
1 cup, halved cherry tomatoes
3 cups rinsed and finely chopped kale, (stems removed)
5 eggs
Salt and black pepper to taste

Preheat the broiler on low.
In an overproof skillet…cast iron is perfect for this.. and over medium heat, heat the oil and then saute the onion for about three minutes and stirring often.
Add the garlic and turkey, and cook for another 3 minutes on medium heat.
Add the kale.
Reduce the heat to low, cover the skillet and continue to cook for about 5 more minutes.
Stir in the cherry tomatoes.
Season with salt, pepper and mix well.
Beat the eggs, season with salt and pepper and pour on top of the turkey mixture. Cook on low for another 2 minutes but don’t stir.
Put the skillet under broiler and cook for about 2 minutes or until the mixture is firm.
